Abstract

Batealit District is one of the leading durian fruit areas in Jepara Regency, Central Java.. The abundant durian production each harvest season leaves a large amount of durian seed waste that has not been optimally utilized. Durian seeds have traditionally been discarded, causing environmental problems and loss of economic potential. The aim of this community service activity is: (1) to raise public awareness about the need for further processing of durian seed waste (zero waste), (2) provide training in processing durian seeds into economically valuable healthy snacks, and (3) encourage the growth of new entrepreneurship based on local products in Jepara Regency. Implementation methods include socialization, hands-on practice training (demonstration), production assistance, and evaluation. The activity was implemented over three months in Batealit Village, Jepara District, Jepara Regency involving 30 participants from housewives and MSME players. The results showed an increase in participants' knowledge by 78%, durian seed processing skills increased significantly, and three snack products were successfully developed: durian seed chips, durian seed flour, and durian seed cookies. This activity contributes to reducing organic waste while opening new business opportunities for the people of Jepara.
